The Story Behind the Scones

These brown sugar pecan scones hold a special place in my heart.

I first made them during the pandemic while living with my grandmother. After closing down my catering company because of the pandemic, I went to help care for her — and to avoid losing everything in the chaos of the nationwide shutdown — I found myself back in the kitchen, baking not just for nourishment, but for healing.

Baking became a ritual. Something cozy and familiar in an uncertain world. My little sister Jada helped me film the process, and that video is now my most-watched on YouTube — a sweet reminder of love, resilience, and sisterhood.

Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Cube butter and freeze it for at least 1 hour

Preheat oven to 400 degrees F

Gather all ingredients

In a large bowl measure out the 2 cups of AP flour, ½ cup brown sugar, 2 ½ tsp Baking Powder

Press the cubed frozen butter into the flour mixture creating a sand-like texture

In a separate container, whisk together the egg, vanilla extract, and  ½ cup milk

Pour the wet ingredients into the dry and stir to combine them with a fork

Once the dough begins to come together, add in the pecans

Dust a clean surface and your hands with flour and turn your scone dough out onto the floured surface

Working quickly, combine the dough and knead it about 5-7 times or until well combined

Form the dough into a level shape with about ½ in thickness

Cut your scone shapes with a floured knife, pastry cutter, or cookie cutter

Place on a parchment lined baking sheet with about 2 in in between each scone

Lightly brush the tops of them with the 2TBS of milk

Bake for 15-20 min

Once baked, allow them to cool before glazing or eat them glaze free!

Glaze
In a small bowl combine the Powdered Sugar, Milk, and
Vanilla Extract until it forms a drizzle consistency. To thicken add more
powdered sugar. To thin add more milk.

1/2 cup AP Flour for dusting

1/2 cup Brown Sugar

2 1/2 tsp Baking Powder

1 stick Butter

1/2 cup Milk

2 TBS Milk for brushing

1 large Egg

2 tsp Vanilla Extract

1/2 cup Pecans (chopped)
